Easy Sausage and Pepper Hoagies #SundaySupper



I have a special love for hearty meals that are fresh and yet super quick to put together. In fact, I'm pretty sure we all love meals that meet this general description:  quick, healthy, satisfying, and tasty!





Those happy adjectives definitely apply to these sausage and pepper hoagies and that's why they are always near the top of my list of go-to quickie meals.




These simple sandwiches take just minutes to make and they are absolutely packed with big flavors.




To be 100% honest, my fussy kids usually pick the peppers and onions off of their buns and it ends up more like a simple meatball sub for them. But, all pepper-picking-off aside, I'm just tickled that they at least love the delicious combination of Italian sausage, marinara and provolone cheese.

I'm also tickled when I watch them enjoy a modest homemade meal as if it was gourmet takeout!



These easy sausage and pepper hoagies are sure to become a family favorite in the 'quick meal' category.

I know they have definitely become one with my crew!

Easy Sausage and Pepper Hoagies

These simple hoagies make a hot and hearty meal. Quick to put together, they are a perfect easy supper for busy weeknights!

INGREDIENTS:


  • 1 lb sweet( or hot if you like spice!) fresh Italian sausage links, sliced into 1/2 inch pieces
  • 1 small green bell pepper, thinly sliced
  • 1 small, red bell pepper, thinly sliced
  • 1/2 medium onion, thinly sliced
  • 1 tsp extra-virgin olive oil
  • 1-2 cups marinara sauce, warmed
  • 5-6 slices, provolone cheese
  • 5-6 fresh hoagie or French-style rolls, sliced

INSTRUCTIONS:


  1. Add oil to a large skillet and warm over medium heat. Add in sausage pieces and allow to cook, stirring often, for about 7 minutes or until browned and nearly cooked through. Drain excessive grease from skillet, if necessary and return meat to the pan.
  2. Add peppers and onions to skillet with the sausage and saute for about 5 minutes or until onions are translucent. Remove skillet from heat. Add a dash or two of pepper, if desired.
  3. Stuff prepared hoagie rolls with a slice of provolone cheese. Top with warm sausage pieces, peppers and 2-3 tablespoons of warm marinara sauce.
  4. Enjoy!
